Vibrant Mediterranean Grilled Vegetables with Olive Oil and Herbs
**Ingredients:**
- – 1 zucchini, sliced into rounds
- – 1 eggplant, sliced into rounds
- – 1 red bell pepper, cut into large pieces
- – 1 yellow bell pepper, cut into large pieces
- – 1 red onion, cut into wedges
- – 1/4 cup olive oil
- – 2 tablespoons balsamic vinegar
- – 2 garlic cloves, minced
- – 1 teaspoon dried oregano
- – 1/2 teaspoon dried thyme
- – Salt and pepper, to taste
– Optional: Crumbled feta cheese for garnish
**Directions:**
1. Preheat a grill or grill pan to medium-high heat.
2. In a large bowl, whisk together olive oil, balsamic vinegar, garlic, oregano, thyme, salt, and pepper. Add the vegetables and toss to coat evenly.
