**Ingredients:**

  • – 1 zucchini, sliced into rounds
  • – 1 eggplant, sliced into rounds
  • – 1 red bell pepper, cut into large pieces
  • – 1 yellow bell pepper, cut into large pieces
  • – 1 red onion, cut into wedges
  • – 1/4 cup olive oil
  • – 2 tablespoons balsamic vinegar
  • – 2 garlic cloves, minced
  • – 1 teaspoon dried oregano
  • – 1/2 teaspoon dried thyme
  • – Salt and pepper, to taste

Optional: Crumbled feta cheese for garnish

**Directions:**
