Mediterranean Garlic Parmesan Chicken Meatloaf
Ingredients:
- 1.5 lbs ground chicken
- ½ cup whole wheat breadcrumbs or crushed wholegrain crackers
- ½ cup grated Parmesan cheese
- ½ cup crumbled feta or shredded mozzarella (plus more for topping)
- 3 cloves garlic, minced
- 1 egg
- ¼ cup milk or plain Greek yogurt
- 2 tbsp chopped sun-dried tomatoes (oil-packed, drained)
- 1 tbsp extra virgin olive oil
- 2 tbsp chopped fresh parsley
- 1 tsp dried oregano or Italian seasoning
- ½ tsp cumin or paprika (optional for warmth)
- Salt and black pepper, to taste
- Fresh parsley or basil, chopped (for garnish)
Instructions:
1. Preheat & Prepare Pan:
Preheat oven to 375°F (190°C).
Lightly grease a loaf pan or line a baking tray with parchment paper.
2. Mix the Meatloaf:
In a large bowl, combine ground chicken, breadcrumbs, Parmesan, feta or mozzarella, garlic, egg, milk/yogurt, sun-dried tomatoes, olive oil, parsley, oregano, salt, pepper, and cumin/paprika if using.
Mix just until combined (don’t overmix or it’ll be tough).
3. Shape & Bake:
Transfer the mixture into your loaf pan or form into a loaf shape on the baking tray.
Top with extra mozzarella or feta cheese.
Bake uncovered for 35–40 minutes, or until internal temp reaches 165°F (74°C) and the top is golden.
4. Optional Broil:
For a crispy, cheesy top, broil for 2–3 minutes at the end.
5. Garnish & Serve:
Let rest for 5–10 minutes before slicing.
Garnish with chopped parsley or fresh basil.
