Mediterranean Garlic Chicken Rice Skillet
Ingredients:
- 2 cups cooked basmati or long-grain rice, cooled (or brown rice for a healthier option)
- 2 chicken breasts, diced (grilled or pan-seared with herbs)
- 2 cloves garlic, minced
- 1 cup Mediterranean-style vegetables (e.g., diced red bell pepper, zucchini, cherry tomatoes, and spinach)
- 2 eggs, lightly beaten
- 2 tbsp extra virgin olive oil
- Juice of ½ lemon
- 1 tsp dried oregano or za’atar (for flavor)
- Salt and freshly ground black pepper – to taste
- 1/4 cup crumbled feta cheese (optional but recommended)
- Fresh herbs like parsley or basil for garnish
- Optional: chopped Kalamata olives or a few sun-dried tomatoes for added depth

Instructions:
1️⃣ Sauté the Chicken:
In a large skillet, heat 1 tbsp olive oil over medium heat.
Add diced chicken and half the garlic. Sauté until chicken is golden and fully cooked (6–8 minutes). Season with salt, pepper, and oregano.
2️⃣ Scramble the Eggs:
Push the chicken to one side of the skillet, add a little more oil if needed, and pour in the beaten eggs. Scramble until cooked, then mix them with the chicken.
3️⃣ Add the Veggies:
Add the Mediterranean vegetables (bell peppers, zucchini, tomatoes, spinach) and remaining garlic. Stir-fry for 2–3 minutes until softened but still vibrant.
4️⃣ Mix in the Rice:
Add the cooled rice to the skillet. Break up clumps and mix thoroughly with the chicken and vegetables.
5️⃣ Season & Flavor:
Drizzle in olive oil and lemon juice. Stir to combine and heat everything through (2–3 minutes).
Taste and adjust salt and pepper.
6️⃣ Garnish & Serve:
Turn off heat. Top with crumbled feta, chopped fresh parsley or basil, and optional olives or sun-dried tomatoes.
Serve warm!
