Mediterranean Cucumber Bites

Ingredients:

  • 2 large cucumbers (peeled and sliced into thick rounds)
  • 1 cup cream cheese (or Greek yogurt cheese for a lighter version)
  • 2 tbsp olive oil
  • 1 tbsp fresh dill or parsley (chopped)
  • 1 tsp lemon juice
  • 1 clove garlic (minced, optional)
  • 1 pinch paprika or chili powder (for garnish)
  • 12–15 cherry tomatoes (whole, tops trimmed if needed)

Instructions:

1. Prepare cucumbers

Slice cucumbers into thick 1–1.5 inch rounds.

Use a melon baller or small spoon to scoop out a shallow center (not all the way through).

2. Make the filling

In a bowl, mix cream cheese (or Greek yogurt cheese) with olive oil, lemon juice, herbs, garlic, salt, and pepper.

Whip until smooth and creamy.

3. Assemble

Pipe or spoon the cheese mixture into the hollowed cucumber rounds.

Place a cherry tomato on top of each.

4. Garnish & serve

Sprinkle with paprika or chili powder for color.

Add extra chopped herbs for freshness.

Chill slightly before serving for the best taste.

Mediterranean Tips:

Swap cream cheese with whipped feta for a sharper Mediterranean flavor.

Drizzle lightly with extra virgin olive oil before serving.

Add a tiny piece of olive or roasted pepper along with the tomato for variety.
