Mediterranean Creamy Chicken Pasta
Ingredients:
- 2 chicken breasts, sliced
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp dried oregano
- Salt & pepper
- 2 cups cooked pasta (penne or fusilli)
- 1 cup cherry tomatoes, halved
- 1/3 cup sun-dried tomatoes, chopped
- 1/4 cup Kalamata olives, sliced
- 1 cup baby spinach
- 1/4 cup crumbled feta
Creamy Sauce:
- 1/2 cup heavy cream (or Greek yogurt)
- 1/4 cup grated Parmesan
- Juice of ½ lemon

Instructions:
1. Cook pasta, drain, and set aside.
2. Cook chicken in olive oil with garlic, oregano, salt & pepper until golden.
3. Add cherry tomatoes, sun-dried tomatoes, olives, and spinach — cook until spinach wilts.
4. Stir in cream, lemon juice, and Parmesan. Simmer for 2–3 mins.
5. Add pasta and toss everything together.
6. Top with feta and serve warm.
