Mediterranean Cottage Cheese Egg Bites
Light, fluffy, and packed with protein and bold Mediterranean flavor—perfect for breakfast, brunch, or meal prep!
Ingredients
Base
- 6 large eggs
- 1 cup cottage cheese (full-fat for creaminess)
- ½ cup shredded cheese (use feta, kasseri, or mozzarella for a Mediterranean twist
Veggies & Flavor
- ½ cup chopped spinach (fresh or thawed from frozen)
- ¼ cup sun-dried tomatoes, finely chopped
- ¼ cup chopped red bell pepper
- 2 tablespoons chopped Kalamata olives (pitted)
- 2 tablespoons chopped fresh parsley or basil
- 1 clove garlic, minced (or ¼ tsp garlic powder)
Seasonings
- ½ teaspoon dried oregano
- Salt & freshly ground black pepper to taste
- Optional: pinch of crushed red chili flakes for heat
Instructions
1. Preheat Oven:
Preheat your oven to 180°C (350°F). Lightly grease a 12-cup muffin tin or use silicone liners.
2. Blend the Base:
In a blender or mixing bowl, combine eggs and cottage cheese. Blend until smooth and creamy.
3. Add the Good Stuff:
Pour the mixture into a bowl. Stir in shredded cheese, spinach, sun-dried tomatoes, bell pepper, olives, herbs, garlic, oregano, salt, and pepper.
4. Fill the Muffin Tin:
Spoon the mixture evenly into the muffin cups, filling about ¾ of the way.
5. Bake:
Bake for 20–25 minutes, or until egg bites are puffed and golden on top. A toothpick inserted should come out clean.
6. Cool & Serve:
Let cool for 5 minutes, then gently remove. Garnish with extra herbs if desired.
Serving Ideas:-
Pair with a dollop of hummus, tzatziki, or serve on a bed of arugula with a drizzle of olive oil and lemon juice.
