Mediterranean Chickpea Salad
Ingredients
1 can (15 oz) chickpeas, drained & rinsed
1 cup cherry tomatoes, halved (mix red & yellow if available)
1 cucumber, diced
1 bell pepper (yellow or red), diced
½ red onion, thinly sliced
½ cup Kalamata olives
½ cup feta cheese, crumbled
2 tbsp fresh parsley, chopped
2 tbsp extra virgin olive oil
1 tbsp balsamic glaze (or vinegar)
1 tsp dried oregano
Salt & black pepper to taste Instructions
In a large salad bowl, combine chickpeas, tomatoes, cucumber, bell pepper, red onion, and olives.
Drizzle with olive oil and balsamic glaze.
Sprinkle with oregano, salt, and pepper. Toss gently.
Top with feta cheese and fresh parsley.
Serve immediately, or chill for 30 minutes for the flavors to blend.
