Mediterranean Chickpea Salad

 

Recipe:

Ingredients:

  •   – 1 can chickpeas, drained and rinsed
  •   – 1/2 cup cherry tomatoes, halved
  •   – 1/2 cucumber, diced
  •   – 1/4 cup red onion, finely chopped
  •   – 1/4 cup feta cheese, crumbled
  •   – 2 tbsp olive oil
  •   – Juice of 1 lemon
  •   – 1 tsp oregano
  •   – Salt and pepper to taste

 

Instructions:

1. Combine chickpeas, cherry tomatoes, cucumber, red onion, and feta cheese in a large bowl.

2. In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.

3. Pour the dressing over the salad and toss to coat evenly.

Serve chilled or at room temperature.
