Mediterranean Chicken Zucchini Bake
A delicious and healthy one-pan meal.
Ingredients:
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
 - 1 large zucchini, sliced into rounds
 - 1 red bell pepper, sliced
 - 1 red onion, sliced
 - 1 cup cherry tomatoes, halved
 - 1/4 cup olive oil
 - 1/4 cup red wine vinegar
 - 2 cloves garlic, minced
 - 1 teaspoon dried oregano
 - 1/2 teaspoon dried basil
 - Salt and pepper to taste
 - 1 cup crumbled feta cheese
 
Instructions:
- Preheat oven: Preheat oven to 400°F (200°C).
 - Prepare vegetables: In a large bowl, combine zucchini, bell pepper, onion, cherry tomatoes, olive oil, red wine vinegar, garlic, oregano, basil, salt, and pepper. Toss to coat.
 - Arrange ingredients: Spread the vegetable mixture in a 9×13 inch baking dish. Top with the chicken cubes.
 - Bake: Bake in preheated oven for 30-35 minutes, or until chicken is cooked through and vegetables are tender.
 - Add cheese: Sprinkle feta cheese over the dish and bake for an additional 5-10 minutes, or until cheese is melted and bubbly.
 
Tips:
For a vegetarian option, substitute the chicken with tofu or chickpeas.
Serve with a side of crusty bread or rice.
