Mediterranean Chicken Bake with Lemon, Olives & Feta
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lemon, thinly sliced
- 1/2 cup pitted kalamata olives
- 1 cup cherry tomatoes, halved
- 1 small red onion, sliced
- 3/4 cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Directions:
Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
Place chicken breasts in the dish. Drizzle with olive oil, then season with garlic, oregano, paprika, salt, and black pepper. Rub evenly to coat.
Arrange lemon slices, olives, cherry tomatoes, and red onion around the chicken.
Bake uncovered for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
Remove from oven and sprinkle crumbled feta cheese over the top. Return to oven for 5 minutes until cheese is slightly melted.
Garnish with fresh parsley and serve warm with rice, couscous, or crusty bread.
