Mediterranean Cauliflower Soup (Quick Version)
Ingredients:
- 1 cauliflower head, florets
- 1 carrot, diced
- 1 celery stalk, diced
- 1 leek (white part), sliced
- 1 small onion, chopped
- 3 tbsp olive oil
- 4 cups vegetable broth
- 1 tsp cumin
- 1/2 tsp turmeric (optional)
- 1 tsp salt, 1/2 tsp pepper
- 1/2 tsp paprika
- 1 lemon (juice)
- 2 tbsp parsley/cilantro
- (Optional) 1/2 cup Greek yogurt
Instructions:
1. Sauté onion, leek, celery, and carrot in olive oil (5 min).
2. Add cauliflower, spices; cook 2–3 min.
3. Pour broth, simmer 20 min.
4. Blend partially if you want it creamy.
5. Stir in lemon juice (and yogurt if using).
6. Garnish with parsley. Serve warm
