Mediterranean Caprese Avocado Toast

 

Ingredients:

  • 1 ripe avocado, mashed
  • 2 slices of whole grain bread (or try sourdough or rustic multigrain)
  • ½ cup cherry tomatoes, halved
  • Fresh mozzarella balls (bocconcini or feta cheese for a sharper Mediterranean twist)
  • Fresh basil leaves, chopped or whole
  • Salt & pepper, to taste
  • Balsamic glaze or extra virgin olive oil & lemon juice
  • (Optional): A few kalamata olives, sliced — for deeper Mediterranean flavor
  • ️ (Optional): Pinch of red chili flakes for a little heat

Instructions:

1. Toast the bread to your preferred level of crispness — golden brown works best.

2. Mash the avocado in a bowl with a pinch of salt and pepper. Add a squeeze of lemon juice if you like a little tang and want to keep it green longer.

3. Spread the mashed avocado generously over each slice of toast.

4. Top with halved cherry tomatoes and mozzarella balls (or crumbled feta if you want a saltier, more Mediterranean flavor).

5. Add fresh basil leaves — either whole or thinly sliced (chiffonade style).

6. Drizzle with balsamic glaze, or for a more traditional Mediterranean taste, drizzle with extra virgin olive oil and a little fresh lemon juice.

7. Sprinkle with salt, pepper, and red chili flakes (optional), and add olives if using.
