Mediterranean Buffalo Chicken Cheeseburger Bombs

For the Filling:
1½ cups cooked chicken breast, shredded
⅓ cup Buffalo sauce (adjust to taste)
½ tsp smoked paprika
½ tsp garlic powder
½ tsp dried oregano
½ cup crumbled feta cheese
½ cup shredded mozzarella cheese
¼ cup finely diced red onion
2 tbsp chopped kalamata olives (optional, for Mediterranean flavor)
Salt and pepper to taste
For the Dough:
1 can (16 oz) refrigerated biscuit dough (8 biscuits)
or use homemade pizza dough divided into 8 equal portions
For Assembly:
1 egg (beaten, for egg wash)
Sesame seeds or everything bagel seasoning (optional, for topping)

1. Preheat Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
2. Make the Filling
In a mixing bowl, combine:
Shredded chicken
Buffalo sauce
Smoked paprika
Garlic powder
Oregano
Feta and mozzarella cheese
Red onion
Kalamata olives (if using)
Salt and pepper to taste
Mix until evenly combined.
3. Prepare the Dough
Flatten each biscuit or dough ball into a 4- to 5-inch round.
Place about 2 tablespoons of the filling in the center of each round.
Carefully fold the dough up and around the filling, pinching the seams to seal and form a ball. Place seam-side down on the prepared baking sheet.
4. Brush and Season
Brush each bomb with the beaten egg.
Sprinkle with sesame seeds or seasoning, if desired.
5. Bake
Bake for 16–20 minutes, or until golden brown and the dough is cooked through.
6. Cool Slightly and Serve
Let cool for 5 minutes before serving. These are perfect with ranch, tzatziki, or extra Buffalo sauce for dipping.
