Mediterranean Baked Parmesan Zucchini Sticks
Crunchy outside, tender inside, and bursting with herbaceous flavor!
Ingredients:
- 2–3 medium zucchinis, cut into sticks (like thick fries)
- 2–3 tablespoons extra virgin olive oil
- ½ cup grated Parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon paprika (optional, for color and depth)
- Salt & freshly ground black pepper, to taste
- Zest of ½ lemon (optional, for a fresh kick)
- Fresh parsley or mint, chopped (for garnish)
For Mediterranean Yogurt Dip (optional but highly recommended):
- ½ cup plain Greek yogurt
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- ½ teaspoon garlic powder or 1 minced clove
- Salt and pepper, to taste
- Fresh dill or mint, finely chopped

Instructions:
1. Preheat the Oven:
Preheat your oven to 425°F (220°C).
Line a baking sheet with parchment paper or lightly grease it with olive oil.
2. Prepare the Zucchini:
In a large bowl, toss zucchini sticks with olive oil, garlic powder, oregano, paprika, salt, pepper, and lemon zest if using.
Sprinkle with Parmesan cheese, tossing to coat each piece evenly. For extra crispiness, press some of the cheese onto the sticks.
3. Bake:
Arrange the sticks in a single layer on the baking sheet.
Bake for 20–25 minutes, flipping once halfway through, until golden and crispy on the edges.
4. Garnish:
Remove from oven and sprinkle with fresh parsley or mint for added freshness.
5. Make the Yogurt Dip:
Mix all dip ingredients in a small bowl. Adjust seasoning to taste. Chill until ready to serve.
