Mediterranean Appetizer Pinwheels
Ingredients:
- 1 sheet puff pastry, thawed
- ½ cup feta cheese, crumbled
- ½ cup cooked spinach, finely chopped and squeezed dry
- ¼ cup Kalamata olives, chopped
- ¼ cup artichoke hearts, chopped
- ¼ cup roasted red peppers, chopped
- 1 egg, beaten (for egg wash)
- Optional: pinch of oregano, black pepper, or a drizzle of olive oil
Instructions:
1️⃣ Preheat Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2️⃣ Prepare the Puff Pastry:
Roll out the thawed puff pastry sheet on a lightly floured surface to smooth it out a bit.
3️⃣ Add the Filling:
Evenly spread the chopped spinach, feta cheese, olives, artichoke hearts, and roasted red peppers across the pastry. Add a sprinkle of black pepper or oregano if desired.
4️⃣ Roll & Slice:
Carefully roll the puff pastry into a tight log (like a jelly roll). Slice the log into ¾-inch thick pinwheels.
5️⃣ Brush & Bake:
Place the pinwheels on the baking sheet. Brush the tops lightly with the beaten egg for that beautiful golden finish.
6️⃣ Bake:
Bake for 15–18 minutes or until puffed and golden brown.
7️⃣ Serve Warm:
Let cool slightly before serving. These are best enjoyed warm but still great at room temp!
