Low-Carb Beef Quesadillas (Diabetic-Friendly)
Ingredients:
- 1 low-carb tortilla
- 1/2 cup lean ground beef (95% lean or ground turkey)
- 1/4 cup shredded low-fat cheese
- 2 tbsp diced onions & peppers
- Spices: chili powder, cumin, garlic powder
- Optional: fresh cilantro
Instructions:
Cook beef with spices and veggies until browned.
Fill tortilla with beef and cheese.
Fold and cook in a dry skillet until golden and melty.
Slice and serve with salsa or plain Greek yogurt.
