Ingredients:

  • 4 large russet potatoes
  • Olive oil
  • Salt
  • Butter
  • Chopped green onions or chives
  • Ground black pepper

Instructions:

1. Preheat your oven to 400°F (200°C).

2. Wash and dry the potatoes thoroughly. Poke a few holes in each one with a fork.

3. Lightly coat the potatoes with olive oil and sprinkle them with salt.

4. Place the potatoes directly on the oven rack and bake for 45 to 60 minutes, or until they’re soft when pierced.

5. Take them out of the oven, slice them open lengthwise, and gently squeeze the sides to open them up.

6. Add a pat of butter, sprinkle with chopped green onions or chives, and season with salt and pepper to taste.

7. Use a fork to fluff the insides, then serve while hot.
