Lime Mousse
Ingredients:
1 can sweetened condensed milk (14 oz)
1 can evaporated milk (12 oz)
1/2 cup freshly squeezed lime juice (about 4-5 limes)
Zest of 2 limes
1 tablespoon gelatin powder
1/4 cup cold water
Optional: additional lime zest for garnish
Preparation:
Prepare the Gelatin:
In a small bowl, sprinkle the gelatin powder over the cold water.
Let it sit for about 5 minutes to bloom.
Microwave the bloomed gelatin for about 10-15 seconds until completely dissolved.
Blend the Ingredients:
In a blender, combine the sweetened condensed milk, evaporated milk, freshly squeezed lime juice, lime zest, and the dissolved gelatin.
Blend until smooth and well combined.
Chill the Mousse:
Pour the mixture into serving glasses or a large bowl.
Cover and refrigerate for at least 4 hours, or until set and firm.
Serve:
Before serving, garnish with additional lime zest if desired.
