Lemon Poppy Protein Loaf 
– Moist, Sweet & Refreshing!


Ingredients:
1 cup cottage cheese
2 large eggs
½ cup almond flour
2–3 tbsp honey or maple syrup (optional for added sweetness)
1 tsp vanilla extract
1 tsp baking powder
Pinch of salt
1 tbsp poppy seeds
Zest of 1 lemon
Optional: 1–2 tbsp fresh lemon juice for extra zing

Directions:
Step 1: Preheat & Prep
Preheat your oven to 350°F (175°C). Grease a small loaf pan or line with parchment paper.
Step 2: Mix the Base
In a mixing bowl, whisk together cottage cheese, eggs, honey, vanilla extract, and lemon zest until smooth.
Step 3: Add Dry Ingredients
Stir in almond flour, baking powder, salt, and poppy seeds until fully combined. Add lemon juice if using.
Step 4: Bake
Pour the batter into the prepared loaf pan and smooth the top. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out mostly clean.
Step 5: Cool & Serve
Allow the loaf to cool for 10 minutes before slicing. Enjoy as a refreshing breakfast or snack!
Tips:
Sprinkle extra poppy seeds on top before baking for a pretty finish.
Store leftovers in the fridge for up to 3 days and enjoy slightly chilled or at room temperature.
