Lemon Herb Chicken Pita Wraps: A Delicious and Refreshing Meal for Any Occasion

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 3 tbsp olive oil
  • 1 shallot, chopped
  • 2 cloves garlic, finely chopped or grated
  • 1 tbsp fresh rosemary, chopped (or 2 tsp dried)
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • Salt and black pepper, to taste
  • 1 lemon, cut into wedges, plus 2 tbsp fresh lemon juice
  • 1 avocado, diced
  • 4 slices thick-cut bacon, cooked and crumbled
  • 4 naan or pita breads, warmed
  • Lettuce and tomato slices, for serving
  • Honey Feta Sauce
  • 6 oz feta cheese
  • Juice of 1 lemon
  • 1 tsp honey
  • Red pepper flakes, to taste
  • 1/4 cup fresh herbs, chopped (such as dill, basil, or parsley)

 

Instructions

  • Prepare the Chicken
  • Preheat your oven to 425°F (220°C).
  • On a baking sheet, toss the chicken pieces with olive oil, shallot, garlic, rosemary, paprika, chili powder, salt, and pepper. Add the lemon wedges to the tray.
  • Bake for 15 minutes, stir, then bake an additional 5-10 minutes, or until the chicken is cooked through.
  • Switch the oven to broil and broil the chicken for 1-2 minutes to lightly char the edges. Keep a close eye to prevent burning.
  • Make the Honey Feta Sauce
  • In a food processor, blend the feta, lemon juice, honey, and red pepper flakes until smooth.
  • Stir in the chopped herbs and drizzle with a little olive oil for extra flavor.
  • Assemble the Wraps
  • Spread or drizzle the honey feta sauce over each naan or pita.
  • Add lettuce and tomato slices, then layer on the roasted chicken, diced avocado, and crumbled bacon.
  • Top with an additional drizzle of feta sauce and garnish with fresh herbs if desired.
