Lemon Cobbler
A tangy, sweet, and buttery dessert with a golden crust and gooey lemon filling—this cobbler is sunshine baked into a dish.
Ingredients
½ cup unsalted butter, melted
1 cup all-purpose flour
1 ½ cups granulated sugar, divided
2 tsp baking powder
¼ tsp salt
1 cup milk
1 tsp vanilla extract
1 (21 oz) can lemon pie filling or lemon curd
Instructions
Preheat Oven:
Heat oven to 350°F (175°C). Pour melted butter into a 9×13-inch baking dish.
Make the Batter:
In a bowl, whisk together flour, 1 cup sugar, baking powder, salt, milk, and vanilla until smooth.
Assemble the Cobbler:
Pour the batter over the melted butter—do not stir.
Spoon lemon pie filling evenly over the batter—again, do not stir. (The layers will bake into a cobbler texture.)
Bake:
Sprinkle remaining ½ cup sugar over the top. Bake for 40–45 minutes, or until golden and bubbly.
Serve:
Let cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or a dollop of whipped cream.
Tip: For extra brightness, add freshly grated lemon zest to the batter before baking.
