2 cloves garlic, minced
2 tbsp taco seasoning (use low-carb or homemade – recipe below)
1/4 cup water
1 can (10 oz) diced tomatoes with green chilies (like Rotel – drained)
Salt & pepper to taste
For the Casserole:
4 oz cream cheese, softened
1/2 cup sour cream
1 1/2 cups shredded cheddar cheese (or a Mexican blend)
1/4 cup chopped green onions (optional)
Optional Toppings:
Sliced jalapeños
Avocado or guacamole
Fresh cilantro
Shredded lettuce
Diced tomatoes
Hot sauce

Preheat oven to 350°F (175°C).
Brown the beef: In a large skillet, cook ground beef and diced onion over medium heat until beef is browned. Drain any excess grease.
Add seasoning: Stir in garlic, taco seasoning, and water. Simmer for 2–3 minutes.
Add tomatoes: Mix in drained diced tomatoes with green chilies. Simmer for another 2–3 minutes.
Make creamy layer: In a separate bowl, mix cream cheese and sour cream until smooth. Stir in half of the shredded cheese.
Assemble the casserole: In a greased 9×9 or 8×11 baking dish, layer the beef mixture on the bottom. Spread the cream cheese mixture on top. Sprinkle with the remaining cheese.
Bake for 20–25 minutes, or until cheese is bubbly and golden.
Top & serve: Garnish with green onions and any other keto-friendly toppings you like.
