Jalapeno Popper Grilled Cheese

INGREDIENTS

    • 23 Jalapeños, chopped and seeds and membranes removed
    • 4 ounces cream cheese, softened
    • ¼ teaspoon garlic powder
    • 4 slices of cheddar cheese
    • 4 slices of bread (your choice of white, whole wheat, etc.)
    • 3 slices of bacon, fully cooked and drained of excess fat
    • 4 tablespoons butter, softened

INSTRUCTIONS

  1. Prepare the Jalapeño Filling:
    • In a small mixing bowl, combine the softened cream cheese, chopped jalapeños, and garlic powder. Mix well until all ingredients are evenly incorporated.
  2. Assemble the Sandwiches:
    • Lay out two slices of bread on a clean surface. Place one slice of cheddar cheese on each slice of bread.
    • Divide the jalapeño filling evenly between the two slices of bread, spreading it out to cover the cheese.
    • Cut the slices of bacon in half and place two halves on top of the jalapeño filling on each sandwich.
    • Top each sandwich with another slice of cheddar cheese.
    • Complete the sandwiches with the remaining slices of bread.
  3. Grill the Sandwiches:
    • Heat a skillet or griddle over medium heat.
    • Spread butter onto the outward-facing sides of each sandwich, ensuring an even coat.
    • Once the skillet is hot, place the sandwiches buttered side down onto the skillet.
    • Grill for about 3-4 minutes or until the bottom is golden brown and crispy.
    • Carefully flip the sandwiches and grill for another 3-4 minutes on the other side, or until the cheese is melted and the bread is golden brown.
  4. Serve:
    • Remove the sandwiches from the skillet and let them sit for a minute before cutting. This allows the cheese to set slightly and prevents the filling from oozing out.
