Italian Chicken Pasta Salad
Ingredients:
- 12 oz cooked rotini or penne pasta, cooled
- 2 cups cooked rotisserie chicken, shredded or chopped
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup black olives, sliced
- ½ cup red onion, thinly sliced
- ½ cup mozzarella pearls or cubed mozzarella
- ¼ cup chopped fresh basil
- ½ cup Italian dressing (store-bought or homemade)
- Salt and pepper, to taste
Instructions:
In a large bowl, combine cooked pasta, chicken, cherry tomatoes, cucumber, olives, red onion, mozzarella, and basil.
Pour Italian dressing over the salad and toss until everything is evenly coated.
Season with salt and pepper to taste.
Chill for at least 30 minutes before serving for best flavor.
Toss again before serving and enjoy cold or at room temperature.
