Ingredients:
1 1/2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp ground cinnamon (optional)
1/2 cup unsalted butter, softened
1/2 cup honey
2 large eggs
1 tsp vanilla extract
1/2 cup milk
1/2 cup chopped walnuts (plus extra for topping)
Instructions:
Preheat oven to 350°F (175°C). Grease and flour a loaf pan (8×4 inches or 9×5 inches).
Mix dry ingredients: In a bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
Cream butter and honey: In a separate large bowl, cream together the softened butter and honey until light and fluffy. This should take about 3-4 minutes.
Add eggs and vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated. Add the vanilla extract and mix well.
Alternate adding dry ingredients and milk: Gradually add the dry ingredients to the wet mixture in batches, alternating with the milk. Start and end with the dry ingredients. Mix until just combined; do not overmix.
Fold in walnuts: Gently fold in the chopped walnuts, reserving a few for sprinkling on top of the loaf before baking.
Bake the loaf: Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the remaining walnuts over the batter.
Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
