Ingredients:
– 12 ounces softened cream cheese
– ¼ cup pumpkin puree
– 2 tablespoons honey (instead of maple syrup)
– 1 teaspoon fresh thyme
– ½ cup chopped pecans
Instructions:
1. In a stand or electric mixer, combine the cream cheese, pumpkin puree, honey, and thyme until the mixture is smooth and well blended.
2. Transfer the mixture onto a sheet of plastic wrap, wrapping it tightly to shape it into a ball. Refrigerate for at least 2 hours or up to one day to allow the cheese to firm up.
3. In a bowl, place the chopped pecans and remove the plastic wrap from the cheese ball. Roll the cheese ball in the pecans, ensuring all sides are coated.
4. Serve alongside crackers or slices of baguette.
