Honey Butter Cornbread Poppers
Golden cornbread bites brushed with honey butter—soft inside, crisp on the edges, and perfectly poppable. Great as a side dish, appetizer, or party snack.
Ingredients
1 cup yellow cornmeal
1 cup all-purpose flour
¼ cup sugar
1 tbsp baking powder
½ tsp salt
1 cup buttermilk
2 large eggs
¼ cup unsalted butter, melted (plus more for brushing)
2 tbsp honey (plus more for drizzle)
Instructions
Preheat oven to 400°F (200°C). Grease a mini muffin pan.
Mix dry ingredients: In a bowl, whisk cornmeal, flour, sugar, baking powder, and salt.
Mix wet ingredients: In another bowl, whisk buttermilk, eggs, melted butter, and honey.
Combine: Stir wet mixture into dry until just combined (don’t overmix).
Bake: Spoon batter into mini muffin cups, filling about ¾ full. Bake 10–12 minutes, until golden and a toothpick comes out clean.
Honey butter glaze: While warm, brush poppers with melted butter mixed with extra honey.
Serve: Best warm, with an extra drizzle of honey if you want them sweeter.
