Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, room temperature
1 cup granulated sugar
2 large eggs
4 ripe bananas, mashed
1/4 cup sour cream
1 teaspoon vanilla extract
1 cup chopped walnuts
For the Cream Cheese Glaze:
4 ounces cream cheese, softened
1 cup powdered sugar
1/2 teaspoon vanilla extract
2-3 tablespoons milk
Directions:
Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
Mix in the mashed bananas, sour cream, and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chopped walnuts.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
To make the cream cheese glaze, beat the cream cheese until smooth. Gradually add the powdered sugar, vanilla extract, and enough milk to achieve a drizzle consistency.
Drizzle the cooled bread with the cream cheese glaze and top with additional chopped walnuts if desired.
