Herbed Couscous with Pine Nuts

– 1 cup couscous

– 1 1/4 cups boiling water or vegetable broth

– 2 tablespoons olive oil

– 1/3 cup toasted pine nuts

– 1/4 cup chopped fresh parsley

– 2 tablespoons chopped fresh mint

– 2 tablespoons chopped fresh cilantro

– Juice of 1 lemon

– Salt and black pepper, to taste

 

Directions:

Start by placing the couscous in a heatproof bowl. Now, pour that steaming hot water or vegetable broth over it, cover it up, and let it hang out for about 5 minutes. Once the time’s up, take a fork and fluff that couscous up like it’s just had a spa day! Drizzle in the olive oil and give it a gentle stir.

 

Next, it’s time to toast the pine nuts! Grab a dry skillet and heat it to medium. Toast those little gems for about 3-4 minutes until they’re golden and fragrant. Keep an eye on them; they can go from perfect to burnt in a flash!
