Ingredients:
For the Cake:
– 2 cups all-purpose flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1/2 cup sour cream
– 3 ripe bananas, mashed
– 1/2 cup chopped walnuts
– 1/2 cup white chocolate chips
For the Filling and Topping:
– 2 cups creamy custard
– 1 banana, sliced (for garnish)
– 1/4 cup whole or halved walnuts (for garnish)
Directions:
1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans to ensure your cakes slide right out when they’re done!
2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set this mixture aside for now.
3. In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy—this step is key!
4. Beat in the eggs one at a time, then stir in that delicious vanilla extract. Your kitchen will start to smell amazing!
5. Mix in the sour cream and mashed bananas until well combined. It should be a thick, luscious batter by now!
6. Gradually add the dry ingredients to the wet ones, mixing until just combined. Gently fold in the chopped walnuts and white chocolate chips for that extra yumminess.
7. Divide the batter evenly between the prepared cake pans. Pop them in the oven and bake for 30-35 minutes, or until a toothpick comes out clean. Let the cakes cool in the pans for 10 minutes before carefully turning them out onto a wire rack to cool completely.
8. Once the cakes are cool, spread half of the creamy custard over the top of one layer. Place the second layer on top and generously spread the remaining custard over the top.
