Ingrediexnts:

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 ripe avocado, diced
  • 1 small cucumber, chopped
  • 10 cherry tomatoes, halved
  • 2 cups baby spinach
  • 1/4 red onion, finely sliced
  • Juice of 1 lemon
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to tas
  • Optional: feta cheese, olives, or chili flakes

Directions:

In a large bowl, combine the chickpeas, diced avocado, cucumber, cherry tomatoes, and red onion.

Add the baby spinach and gently toss the ingredients together.

In a small bowl, whisk the lemon juice, olive oil, oregano, salt, and pepper.

Pour the dressing over the salad and mix well to combine.
