Grilled Zucchini with Lemon & Herbs
Ingredients (Serves 4)
3 medium zucchinis, sliced lengthwise into planks
3 tbsp extra virgin olive oil
2 garlic cloves, minced
Juice of 1 lemon
Zest of 1 lemon
1 tsp dried oregano
½ tsp chili flakes (optional)
Salt & black pepper, to taste
2 tbsp fresh parsley, chopped
Instructions
Step 1 – Prep the Zucchini
Slice zucchini lengthwise into ¼-inch thick planks.
Pat dry with a paper towel to avoid excess moisture.
Step 2 – Make Marinade
In a small bowl, whisk together olive oil, garlic, lemon juice, zest, oregano, chili flakes, salt, and pepper.
Brush zucchini slices generously with the marinade.
Step 3 – Grill
Heat a grill pan or outdoor grill to medium-high heat.
Grill zucchini 2–3 minutes per side until tender with nice grill marks.
Step 4 – Serve
Transfer to a platter.
Drizzle with extra olive oil and squeeze of lemon.
Sprinkle with fresh parsley.
Serving Suggestions
Serve as a side with grilled chicken, fish, or lamb.
Add to a Mediterranean grain bowl with couscous, chickpeas, and feta.
Layer inside a veggie sandwich or wrap with hummus.
Chop and toss into pasta or salad for extra flavor.
