Grilled Zucchini & Halloumi Wrap with Herb-Yogurt Sauce
Ingredients:
For the Wraps:
2 medium zucchinis, sliced lengthwise
8 oz (225g) halloumi cheese, sliced
2 tbsp olive oil
Salt & black pepper, to taste
4 large flatbreads or wraps
1 cup mixed greens
For the Herb-Yogurt Sauce:
½ cup Greek yogurt
2 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped
1 garlic clove, minced
1 tsp lemon juice
Salt & pepper, to taste
Directions:
Preheat grill or grill pan over medium heat. Brush zucchini and halloumi with olive oil and season with salt and pepper.
Grill zucchini 2–3 minutes per side until tender. Grill halloumi 1–2 minutes per side until golden and slightly melted.
Prepare the herb-yogurt sauce by mixing Greek yogurt, parsley, dill, garlic, lemon juice, salt, and pepper in a small bowl.
Assemble wraps: layer mixed greens, grilled zucchini, and halloumi on each flatbread. Drizzle generously with herb-yogurt sauce.
Fold or roll the wraps and serve immediately.
