Grilled Chicken Thighs with Fresh Herb Marinade
Ingredients:
1/2 cup fresh cilantro
1/2 cup fresh parsley, chopped
1 tablespoon fresh oregano
1 small shallot, peeled
2 cloves garlic, peeled
1/2 jalapeño pepper, seeded
1 tablespoon lemon juice
1 tablespoon vinegar
1/2 cup oil
1 teaspoon salt
Fresh ground pepper to taste
2 lbs boneless chicken thighs
Instructions:
In a food processor, combine the cilantro, parsley, oregano, shallot, garlic, and jalapeño.
Add the lemon juice, vinegar, oil, salt, and pepper. Pulse until well combined and finely chopped.
Place the chicken thighs in a baking dish. Season with salt and pepper, and cover with 1/4 cup of the chimichurri sauce. Turn the chicken to coat it completely. Marinate for 20 minutes to 24 hours in the refrigerator.
Remove the chicken from the refrigerator and allow it to come to room temperature slightly. Heat the grill to medium-high.
Grill the chicken for about 5-6 minutes per side, until the juices run clear.
Serve with extra chimichurri on the side.
