Grilled Chicken Caprese with Avocado & Balsamic Glaze
A recipe that tastes like summer, feels like comfort, and looks like love on a plate
Ingredients
- 2 boneless, skinless chicken breasts
- Salt & freshly ground black pepper
- 1 tbsp olive oil
- 1 large ripe tomato, thickly sliced
- 1 ball of fresh mozzarella, sliced
- ½ ripe avocado, sliced
- Fresh thyme or basil leaves
- 2 tbsp balsamic glaze
- Optional: roasted cherry tomatoes for garnish
Instructions
1. Prepare the Chicken with Love:
Season the chicken breasts generously with salt and pepper.
Heat a grill pan over medium-high heat and drizzle olive oil.
Grill each chicken breast for 5–7 minutes per side until cooked through and golden with slight char lines — those beautiful little kisses from the flame.
2. Build the Layers of Flavor:
While the chicken rests (because rest is important — for food and for us), slice the tomato, mozzarella, and avocado.
Carefully lay a warm chicken breast on each plate. Gently stack a slice of tomato, followed by mozzarella and avocado, as if you’re tucking them in with care.
3. Finish with Emotion:
Drizzle rich, glossy balsamic glaze over the entire stack — don’t hold back. Let it cascade like a final brushstroke on a canvas.
Garnish with fresh thyme or basil, a touch of cracked pepper, and if you like, a few roasted cherry tomatoes on the side.
