Grilled Chicken Caprese Avocado Salad
A fresh and satisfying bowl full of flavor!
Ingredients:
- 1 grilled chicken breast, sliced
- 2 cups fresh spinach or mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cup mozzarella balls (bocconcini)
- 1 ripe avocado, sliced
- Fresh basil leaves
- Salt & black pepper to taste
For the Dressing:
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp pesto (optional for extra flavor)
- Salt & pepper to taste
Method:
Grill the Chicken: Season chicken breast with salt, pepper, and a bit of olive oil. Grill until fully cooked and golden, then slice.
Prepare the Salad Base: In a large bowl, layer spinach or greens.
Assemble: Top with sliced grilled chicken, cherry tomatoes, mozzarella balls, avocado, and basil.
