Greek Chicken Apple Salad
Ingredients
- 1½ cups cooked chicken breast, diced or shredded (grilled or rotisserie)
- 1 apple, chopped (Honeycrisp or Fuji for sweetness & crunch)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ¼ cup red onion, thinly sliced
- Optional Add-ins (Greek-style):
- ¼ cup crumbled feta cheese
- ¼ cup Kalamata olives, pitted and sliced
- 2 tbsp chopped fresh parsley or mint
- Simple Greek Dressing
- 2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar or lemon juice
- ½ tsp dried oregano
- Salt & pepper, to taste
- Optional: ¼ tsp Dijon mustard (for a little tang and emulsification)
Instructions
Prep the ingredients:
Chop the apple last to prevent browning (or toss it with a bit of lemon juice). Dice or shred the chicken if not already done.
Make the dressing:
Whisk olive oil, vinegar (or lemon juice), oregano, and Dijon (if using) in a small bowl. Season with salt and pepper to taste.
Assemble the salad:
In a large bowl, combine chicken, apple, cherry tomatoes, cucumber, and red onion. Add feta and olives if desired.
Dress and toss:
Pour dressing over the salad and gently toss to combine. Garnish with fresh herbs.
Serve immediately or chill for 15 minutes to let flavors meld.
