Sweet, juicy peaches tucked inside a buttery cobbler-style crust—this nostalgic pie is simple, rustic, and full of homemade charm.
Ingredients
For the Filling:
6 cups fresh peaches, peeled and sliced (or frozen/thawed)
1 cup granulated sugar
2 tbsp brown sugar
2 tbsp cornstarch
½ tsp ground cinnamon
¼ tsp nutmeg
1 tsp vanilla extract
1 tbsp lemon juice
Pinch of salt
For the Cobbler Topping:
1 cup all-purpose flour
1 cup granulated sugar
2 tsp baking powder
½ tsp salt
1 cup milk
½ cup unsalted butter, melted
Instructions
Preheat the Oven:
Heat to 350°F (175°C). Grease a deep 9-inch pie dish.
Prepare the Peaches:
In a large bowl, toss peaches with sugar, brown sugar, cornstarch, cinnamon, nutmeg, vanilla, lemon juice, and salt. Mix well and set aside to let the juices develop.
Make the Batter:
In another bowl, whisk together flour, sugar, baking powder, and salt. Stir in milk until smooth, then mix in the melted butter.
Assemble the Pie:
Pour the batter into the greased pie dish. Spoon peach mixture (with juices) evenly over the batter. Don’t stir—the batter will rise up around the peaches as it bakes.
Bake:
Bake for 45–55 minutes, until the topping is golden brown and the filling is bubbly.
Serve:
Let cool slightly before serving. Best enjoyed warm with a scoop of vanilla ice cream.
Tip: If using canned peaches, reduce the sugar slightly since they’re already sweetened.
