Grammie’s Classic Coconut Pie
Ingredients:
- 1 pre-baked pie crust (store-bought or homemade)
- 1 (14 oz) can sweetened condensed milk
- 1 cup sweetened shredded coconut
- 3 large eggs
- ½ cup whole milk
- 1 tsp vanilla extract
- 1 tbsp all-purpose flour (for thickening)
- A pinch of salt
Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a medium bowl, whisk together the eggs, sweetened condensed milk, whole milk, flour, vanilla, and salt until well combined and smooth.
3. Fold in the shredded coconut until evenly mixed.
4. Pour the mixture into the prepared pie crust and spread it out evenly.
5. Bake for 40 to 45 minutes, or until the center is set and the top turns a light golden brown.
6. Allow the pie to cool completely before slicing. Serve with a spoonful of whipped cream if desired.
