Golden Garlic Parmesan Chicken with Creamy Cajun Butter Rice
Ingredients:
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 tablespoon butter
- For the Creamy Cajun Butter Rice:
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1 cup long grain white rice
- 2 cups chicken broth
- 1/2 teaspoon Cajun seasoning (more if desired)
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 2 tablespoons grated Parmesan cheese
- Chopped parsley for garnish (optional)
Directions:
Prepare the chicken: In a shallow bowl, mix Parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper. Dredge each chicken breast in the mixture, pressing firmly to coat.
Heat olive oil and butter in a large skillet over medium heat. Add chicken and cook for 5–6 minutes per side or until golden and cooked through. Remove and set aside.
For the rice: In the same pan, melt butter and sauté garlic until fragrant, about 1 minute. Add rice and stir to coat for 1–2 minutes.
Pour in chicken broth, Cajun seasoning, and pepper. Stir well, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is tender.
Once cooked, stir in heavy cream and Parmesan cheese. Let it simmer uncovered for 2–3 minutes until thick and creamy.
Serve golden garlic Parmesan chicken over a generous scoop of creamy Cajun butter rice. Garnish with parsley if desired.
