Garlic Parmesan Melting Cabbage
Ingredients:
1 large green cabbage, cut into 1.5-inch thick rounds (about 4–6 slices depending on cabbage size)
3 tbsp olive oil
1 tsp salt
½ tsp black pepper
½ tsp paprika (optional, for extra depth)
4 cloves garlic, minced
¼ cup unsalted butter, melted
½ cup grated Parmesan cheese
¼ cup low-sodium vegetable or chicken broth (optional, for added moisture during baking)
Fresh parsley (for garnish, optional)

1. Preheat oven:
Set oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easier cleanup.
2. Prepare cabbage:
Place the cabbage rounds in a single layer on the baking sheet. Try not to overlap them.
3. Make garlic butter:
In a small bowl, combine:
Melted butter
Olive oil
Minced garlic
Salt, pepper, and paprika
Stir well.
4. Brush and roast:
Generously brush both sides of the cabbage rounds with the garlic butter mixture. Roast in the oven for 20 minutes.
5. Flip & add Parmesan:
Carefully flip each cabbage round using a spatula. Spoon a little broth around (not over) the cabbage slices if using. Sprinkle grated Parmesan generously on top of each slice.
6. Finish roasting:
Return to the oven and roast for another 15–20 minutes, or until the cabbage is tender in the center and crispy around the edges, and the cheese is golden and bubbly.
7. Serve:
Garnish with chopped fresh parsley if desired. Serve hot as a side dish or a vegetarian main.
