Ingredients:
1 lb ground chicken
1/2 cup grated Parmesan cheese
1/4 cup breadcrumbs
1 egg
2 cloves garlic, minced
1 tablespoon parsley, chopped
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup milk
1/4 cup shredded mozzarella (for topping)
Olive oil for brushing
Directions:
Preheat the oven to 375°F (190°C).
In a large bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, egg, garlic, parsley, Italian seasoning, salt, and pepper.
Gradually mix in the milk until the mixture is well combined and moist.
Shape the mixture into small individual meatloaves (about the size of a muffin) and place them in a greased muffin tin or on a baking sheet.
Brush the tops with olive oil to help them crisp up while baking.
Bake for 25 minutes, then sprinkle shredded mozzarella on top of each mini meatloaf.
Return to the oven for an additional 5 minutes, or until the cheese is melted and golden.
Let the meatloaves rest for 5 minutes before serving.
