Garlic Parmesan Chicken and Potatoes Skillet
Juicy chicken and crispy golden potatoes cooked together in a garlicky Parmesan butter sauce—an easy skillet meal loaded with flavor.
Ingredients
4 boneless, skinless chicken breasts (or thighs)
1 ½ lbs baby potatoes, halved
3 tbsp olive oil, divided
4 tbsp unsalted butter, divided
5 cloves garlic, minced
1 tsp Italian seasoning
½ tsp smoked paprika
1 tsp salt (plus more to taste)
½ tsp black pepper
½ cup grated Parmesan cheese
2 tbsp fresh parsley, chopped (for garnish)
Instructions
Prepare the Chicken:
Season chicken with Italian seasoning, smoked paprika, salt, and pepper.
Cook the Potatoes:
Heat 2 tbsp olive oil and 2 tbsp butter in a large skillet over medium heat.
Add potatoes, cut side down, and cook for 6–8 minutes until golden and tender. Remove and set aside.
Cook the Chicken:
In the same skillet, add 1 tbsp olive oil. Sear chicken for 4–5 minutes per side until golden and cooked through (165°F internal temperature). Transfer chicken to a plate.
Make Garlic Butter Sauce:
Lower heat slightly. Add remaining 2 tbsp butter and minced garlic to the skillet. Cook until fragrant (about 1 minute).
Combine Everything:
Return potatoes to the skillet, tossing to coat in the garlic butter. Sprinkle Parmesan over potatoes, then add chicken back into the skillet.
Finish and Serve:
Garnish with fresh parsley and extra Parmesan. Serve hot straight from the skillet.
Tip: For extra crispiness, broil the skillet in the oven for 2–3 minutes before serving.
