Ingredients
Dry Ingredients:
2 cups (240g) all-purpose flour (or half whole wheat for extra fiber)
1 tbsp baking powder
½ tsp baking soda
¾ tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp dried parsley (or use fresh if available)
½ tsp dried thyme or rosemary (optional)
Wet Ingredients:
1 cup (225g) cottage cheese (preferably small curd, 2% or full-fat)
½ cup (120ml) milk (dairy or unsweetened non-dairy)
4 tbsp (60g) cold butter, cubed or grated
½ cup (50g) shredded cheddar cheese (or parmesan/mozzarella)
1 tbsp chopped fresh chives or green onions (optional)
Topping (Optional but recommended):
1 tbsp melted butter
½ tsp garlic powder
1 tsp chopped parsley
Instructions
1. Preheat oven to 425°F (220°C).
Line a baking sheet with parchment paper or lightly grease it.
2. Mix dry ingredients:
In a large bowl, whisk together:
Flour
Baking powder
Baking soda
Salt
Garlic powder
Onion powder
Dried herbs
3. Cut in the butter:
Add the cold butter to the dry mixture.
Use a pastry cutter or your fingers to rub it into the flour until the mix resembles coarse crumbs.
4. Add cheeses:
Stir in the cottage cheese and shredded cheddar, plus chives if using.
5. Add milk:
Pour in the milk and gently mix until a soft dough forms.
Do not overmix – just enough for everything to come together.
6. Shape biscuits:
Drop biscuits by large spoonfuls (or a ¼ cup scoop) onto your prepared baking sheet.
You can also lightly flour your hands and form them into rough rounds for more even shape.
7. Bake:
Bake for 15–18 minutes until golden brown and cooked through.
8. Optional Garlic Butter Topping:
While hot, brush the tops with melted butter mixed with garlic powder and parsley for extra flavor and shine.
