Ingredients:
1 (3.4 oz) package instant pistachio pudding mix
1 (20 oz) can crushed pineapple, undrained
Instructions:
Combine the instant pistachio pudding mix and crushed pineapple (including the juice) in a large mixing bowl. Mix well until fully combined.
Add whipped topping and gently fold it into the mixture until smooth and evenly incorporated.
Stir in mini marshmallows and mix until evenly distributed.
Cover and refrigerate the mixture for at least 1-2 hours or until chilled.
Serve cold as a light dessert or side dish.
