Epic Grilled Chicken with Creamy Herb Potatoes

Ingredients

Chicken:

  • Boneless chicken breasts
  • Olive oil
  • Garlic powder
  • Paprika
  • Dried oregano
  • Lemon juice
  • Salt & pepper

Potatoes:

  • Baby potatoes
  • Red onion (finely diced)
  • Fresh parsley & chives
  • Mayonnaise or Greek yogurt
  • Dijon mustard
  • Lemon zest
  • Salt & pepper

Instructions

1. Season chicken with oil, spices, oregano, lemon juice, salt & pepper.

2. Grill until fully cooked and nicely charred.

3. Boil potatoes until tender, then cool slightly.

4. Mix dressing: mayo/yogurt, mustard, lemon zest, onion, herbs, salt & pepper.

5. Toss potatoes in dressing.

6. Slice chicken and serve with creamy herb potatoes. Drizzle with extra dressing if desired.
