Easy Chicken Quesadillas

This Easy Chicken Quesadilla Recipe is a delicious and cheesy solution for a quick weekday supper that the whole family will love!

Ingredients

  1. One tablespoon of oil from avocados
  2. 1/4 cup of red bell pepper, chopped
  3. Diced green bell pepper, 1/4 cup
  4. one minced garlic clove
  5. two teaspoons of finely chopped red onion
  6. 1 tablespoon optionally finely minced jalapeño pepper
  7. A rotisserie chicken works well for this. 1/2 cup chopped cooked chicken
  8. Taco seasoning, two tablespoons (see notes)
  9. three tsp water
  10. Two tsp softened butter
  11. Two flour tortillas the size of burritos
  12. 3/4 cup of shredded cheese (I prefer a combination of Monterey Jack and strong cheddar)
  13. Serve with fresh lime wedges, pico de gallo, guacamole, or sour cream.

Guidelines

  • In a medium skillet, heat the avocado oil over medium-high heat. Add the jalapeño (if using), red and green bell peppers, garlic, and red onion. Sauté for about 5 minutes, or until slightly aromatic and tender.
  • Stir in water, taco spice, and cooked chicken. Bring to a simmer and cook for about two minutes, or until slightly thickened. After taking out of the skillet, place the chicken mixture aside.
  • Clean the skillet with a cloth. Put the skillet back on the medium-high burner.
  • Apply one tablespoon of butter on one side of each tortilla, one at a time. Lay the tortilla in the heated skillet, butter side down. Next, quickly cover the entire tortilla with half of the grated cheese.
  • After spreading half of the chicken mixture over one tortilla, heat it until the cheese starts to melt. The side with simply cheese should be flipped over onto the chicken mixture using a spatula. Press down with the spatula to seal.
  • To crisp up the tortilla, grill for a further two minutes after flipping the entire quesadilla over and cooking for a further two minutes on the other side.
  • Take off the heat and quickly cut with a sharp knife or pizza cutter into wedges. Accompany with pico de gallo, guacamole, sour cream, or fresh lime wedges.
