Ingredients:
– 1 can chickpeas, drained and rinsed
– 1/2 cup cherry tomatoes, halved
– 1/4 cup cucumber, sliced
– 1/4 cup Kalamata olives, pitted
– 2 tbsp olive oil
– 1 tsp lemon juice
– Salt and pepper to taste
– Fresh parsley, chopped (optional)
