Ingredients:
– 1 cup graham cracker crumbs
– 1/4 cup granulated sugar
– 1/4 cup unsalted butter, melted
– 8 oz cream cheese, softened
– 1/2 cup granulated sugar
– 1/2 cup sour cream
– 1/2 cup heavy cream
– 1/4 cup lemon juice
– 1 teaspoon lemon zest
– 1 cup fresh strawberries, hulled and sliced
– 1/4 cup strawberry jam
Instructions:
1. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of serving glasses or bowls to form the crust.
2. In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
3. Mix in sour cream, lemon juice, and lemon zest until well combined.
4. In another bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
5. Spoon or pipe the cheesecake mousse over the graham cracker crust in each glass or bowl.
6. Refrigerate for at least 2 hours to set.
