Cucumber Tomato Onion Red Pepper Salad

Ingredients:

  • 1 large cucumber, sliced
  • 2 medium tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • 1 red bell pepper, chopped
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar or lemon juice
  • Salt and pepper to taste
  • Optional: fresh herbs (parsley, basil, or dill)

Preparation:

In a large bowl, combine cucumber, tomatoes, red onion, and red pepper.

Drizzle with olive oil and vinegar (or lemon juice).

Season with salt, pepper, and herbs if using.

Toss gently to combine. Chill for 15–30 minutes before serving for best flavor.
